Rubbed Crown Roast of Pork
You will need 2 turkey size plastic oven bags for this recipe.
One day before you plan to cook the roast, prepare juniper brine and allow it to cool completely.
Create a double thick bag by opening one oven bag inside the other. Place bags inside a pot or cooler large enough to hold roast and put roast inside bags, rib bones up. Pour in brine carefully, completely submerging roast, then tie up bags and place in fridge for at least 12 and up to 24 hours.
Remove pork from the fridge 1 hours before you plan to roast it. Set pork, still in its brine bag, in the sink. Remove it from brine, discarding bags and brine, and rinse well und hollister sale er cold water. Pat dry with paper towels. Transfer to a shallow roasting pan.
Prepare garlic and herb paste.
Rub paste generously over roast. Set pork, rib bones down, in pan. Allow to marinate at room temperature up to 1 hour.
Thirty minutes ahead, preheat oven to 450 degrees.
Roast pork in preheated oven 15 minutes. Lower oven to 325 degrees and hollister sale roast 1 hour. Remove from oven when an instant read thermometer registers 145 degrees to 150 degrees. Transfer to a platter and tent with foil for 20 minutes to allow juices to set and temperature to rise another 5 degrees to 10 degrees.
